I'm a true oatmeal cookie monster... I just counted, and as of January 2018, I've shared 47 oatmeal cookie recipes with you. Eep! Have you ever tried any of them yet? (? You can locate all of my oatmeal cookie recipes right there!) They are some of the most well-known recipes on my blog cause they taste really sweet and comfy, just like traditional"indulgent" oatmeal cookie recipes, but they include no refined flour or sugar!
That means you'll start with whole wheat bread (or gluten free, if you like ) and instantaneous oats (like those... or these for a gluten free version!) . Instant oats are thinner and smaller than conventional rolled oats, also you are able to see them at canisters right next to those old-fashioned oats in the grocery shop.
I probably seem like a broken record by now... But because I ? you and also want your cookies to turn out absolutely plump and soft, I'm reminding you again... Quantify your flour and oats properly, using this method or a kitchen scale! (? That's the one I own and enjoy. It just cost $20!) A lot of either side is likely to make your cookies taste cakey or dry, instead of chewy. This is particularly true of the oats--they act like little sponges and soak up plenty of moisture from the cookie dough!
Ripe bananas- ideal for baking! Love all @amybakeshealthy's yummy & healthful banana recipes!
Watch those bananas? And all those brown spots? When it comes to baking bananas, brown = amazing! I ? additional speckly bananas because they have a lot glowing, bold taste --and also additional natural sweetness! That's the minimum quantity of brown which I suggest. More is better!
The remainder of the cookie dough's sweetness comes from another organic ingredient... Pure maple syrup (such as that!) . You would like the type that comes straight from pine trees, which is usually sold in thin glass jars or squat, round plastic jugs. Skip the pancake syrup and sugar!

The pancakes include much more sweetness! The recently purchased, additional plump, perfectly delicate ones are perfect... But if you have older, somewhat dried out carbohydrates (hmm... it sounds absurd to explain dried fruit as dried out! ) , that's okay!
Just add them into some microwave-safe bowl, and pour water on top until they're fully covered. Seal plastic wrap over the surface, and then microwave the news bowl on high for 1 minute. If you allow the peppers sit while mixing together the cookie dough, this little trick hydrates them so they're exceptionally succulent --and that makes a difference in these cookies once they're baked!

Yields: 15 cookies
The recognizable comfy spices and plump raisins make them much more irresistible. They'll keep for a minumum of one week if kept in an airtight container in the refrigerator--if they last long!
1 cup (100g) instant oats (fermented if needed and measured like this)
3/4 cup (90g) whole wheat or fermented * flour (quantified like that )
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1 tsp vanilla extract
1/2 cup (120mL) pure maple syrup
1/4 cup (40g) raisins
In a medium bowl, whisk together the yogurt, milk, baking powder, cinnamon, and salt. Add the flour mixture, stirring just until incorporated. Fold in the raisins.
Preheat the oven to 325°F, along with a baking sheet with a silicone baking mat or parchment paper.
With a spoon and spatula, drop the cookie dough to 15 curved scoops on the prepared sheet, and apply to the desired depth and width by means 15 Easy Healthy Cookie Recipes - How to Make Healthy Cookies of a spatula. Bake at 325°F for about 10-12 minutes. Cool to the pan for 10 minutes before turning out onto a wire rack.
Notes: It's extremely important to measure both the oats and flour correctly utilizing this method or a kitchen scale. (? That's exactly the one I own and adore!) Too much of either could dry out the cookies and render them cakey instead of chewy.
Immediate oats are also known as quick-cooking or minute oats. They arrive in huge canisters, exactly like conservative oats. They're not the ones at the small flavored packets of oatmeal. To create your own, add the same number of old-fashioned oats to your food processor, and pulse 10-12 days or until the oats are about 1/4 to ? of the initial size.
For the gluten-free flour, I suggest the following mix: 1/2 cup (60g) millet flour, 2 tablespoons (15g) tapioca flour, 2 tablespoons (15g) brown rice bran, also 1/2 tsp xanthan gum. Most store-bought gluten-free flour blends (such as that one!) Will also work, if measured like this.
If your raisins are old, drier, and not very plump or succulent... Add them to a microwave-safe bowl, and put water on top till they're fully covered. Seal plastic wrap across the top, and then microwave the bowl on high for 1 minute. Should you allow the raisins sit mixing together the cookie dough, then this little hint hydrates them they're really tender and succulent!
